Oysters

 

Few foods carry the flavour of a place quite like an oyster and our bivalves, are no exception. Nestled in the Beowa National Park on the New South Wales deep south coast, our medal-winning oysters are wild-caught and lovingly raised. 

 

Replenished twice daily with cool oceanic water, the nutrient-rich environment is high quality. Wild oysters cling to rocks in their thousands along the entire foreshore, which is a sign of the absolute ideal conditions for catching and growing oysters.

​Unlike their Pacific oyster blow-ins, rock oysters are indigenous to the East Coast of Australia, so you won't find this amazingness anywhere else in the world. ​Our wild rock oysters taste of the pure ocean; rich, briny, funky and creamy with a sweet and salty mineral tang.

 

Our philosophy is simple; using low impact and sustainable farming methods we grow kick-ass oysters for everyone to enjoy. Our oysters are available year-round but our 'blow your hair back' season is traditionally from January to July. We can supply large wholesale orders for fishmongers or weekly loot for chefs. We also offer smaller quantities for the people via our online shop and at our new flagship located in the heart of Pambula Village.

Pambula Oyster Co. is proudly independent (no government or investor handouts here), purposely hands on (it's just the two of us running the show), sticklers for quality (every single oyster is graded meticulously with love and care) and down for a silly goose time all the time (absolutely no exceptions).
